How do I get my Magic Defense skill above zero?

To accomplish this, you must encounter hostile magic in order to trigger your natural, but latent abilities. One common way to do this is to find Charlie in newbie land, and have her cast fireballs at you until the skill reaches one. Her magic apparently does very little damage, so unless you have low hp, you should not need shielding.

Once you have the skill up to at least one, you can go back to any of the class trainers and ask trainer to list spells then ask trainer to teach spell. You should be able to learn field and buffer immediately. You'll probably want to use field most of the time as a newbie, as buffer is much more expensive, and does not protect significantly better at low levels.

How do I get my Healing skill above zero?

To do this you must use a healing artifact in order to awaken your own latent healing ability. The common way to do this appears to be to get a healing scroll from the hut of the Praxis knight, and use it to heal yourself (use scroll to cast heal -- you must be down at least 50hp). You must also find someone to convert you to the worship of Talima before you can do this successfully.

Once you have the skill up to at least one, you can go back to any of the class trainers and ask trainer to list spells then ask trainer to teach spell. You should be able to learn mend, refresh and rejuvination immediately.

Where can I get fishing gear?

There is quite a bit of gear both obvious and hidden. The most basic is the bamboo pole, frequently found lying around on the Praxis pier. There are also lightning rods in Cloud Castle, which also occasionally fall out of the sky around Treasury Castle. Woven nets can be found at the Nilreine fishing hole, and there are also useful pieces of gear hidden at both the Botania and Nairn holes.
