I got this recipe from my mother, and it is a staple of my breakfast diet. I make at least one batch of these a month, often two or more. If you happen to have an old banana lying around, just mash it up and toss it in for a bit of banana flavour. I usually use more than the called for amount of chips too. This recipe will fill standard muffin cups to the top, so don't worry that you're overfilling them.
Combine dry ingredients. Mix eggs, milk, vanilla, and oil well, and add to dry ingredients. Stir to blend, but don't overmix. Bake at 375F for about 20 minutes. Makes one dozen.
This is my mother's recipe. I find it can be a little dry, but I haven't experimented with other dark bran muffin recipes yet.
Mix together oil, brown sugar, molasses, eggs. Add milk and then bran. Sift flour, baking powder, soda together. Add raisins. Bake at 400 degrees for 15 to 20 minutes. Makes a good dozen.

Cream shortening and sugar, add the egg, and beat. Add the bran and sour milk in which the soda has been dissolved. Add flour, baking powder and salt. Bake at 375F for 15-20 mins.
Dates may be added. Cook the dates with a little water and let them cool. Mix the date mixture with flour before adding to batter.
Makes 8 large muffins. Pour maple syrup over these for a yummy dessert.

Preheat oven to 425F. Grease 12 muffin tins with shortening. Sift together flour, sugar, baking powder, and salt. Add oatmeal, stir to mix. Mix in egg, milk, and oil, stirring only to moisten. Fill 12 muffin tins and bake for 15 minutes or until lightly golden brown on top.

Combine sugar and eggs in bowl #1; beat. Combine flour and baking powder in bowl #2. Alternate adding some of flour mixture and some of the milk to bowl #1, mixing after each, and beginning and ending with the flour mixture. Add butter and vanilla.
Spoon into muffin pan. Bake at 400F for about 20 min.
